On a warm summer day, Maria took her daughter Sofia for a stroll through the nearby fields. Maria spotted a small tree as they were strolling along. She looked more closely and saw that the tree produced tiny, white fruits, which she had never seen before.
Maria first thought the fruits were animal or bird eggs, but upon closer inspection she realized they were eggplants. Sofia begged her mom to bring some of the strange, white fruits home so she could cook them.

She would select a few eggplants from the tree and bring them inside since they had created a family favorite recipe called eggplant parmesan.
For Maria and Sofia, the discovery of the white eggplant tree opened up a whole new world of culinary possibilities. It also served as a reminder to Maria of the fact that sometimes the most amazing things can be found in the most unexpected places.
